Using Web Content Folders When Adding Content To A Page

Liferay 7.0.10
Liferay allows you to create folders to store different web contents you create that will be used on pages but when adding web contents to a page the folder structure you created does not appear. It expects you to select the web contents from a list that can only be sorted by fields that are generated by Liferay(ID and modified date), or perform a search. Is there a way to add web contents to a page through the GUI that will allow us to use the folder structure we have created?
Also, Liferay only sorts web contents, templates, and structures by modified date and ID. Both of these fields are not very helpful to us for sorting. Is there a way to enable sorting by name or description? We would rather sort on fields that are populated by the user(Name or Description), not ones populated by Liferay.
