I'm exploring Liferay Objects and I'm able to create items.

Also I was able to use Liferay Forms to create Liferay Objects items.

In none of the two methods I found the possibility of associating Categories and/ot Tags to the Objects item created.

Is this a function provided by Liferay Objects framework?

If not, what alternative could I use to assign Categories and/or Tags to a Liferay Objects item?

You can configure your Objects record's layout to handle Categorization, see: https://learn.liferay.com/w/dxp/building-applications/objects/creating-and-managing-objects/layouts/adding-categorization-to-fields-tabs
