Are you using the default "single approver" workflow? It
assigns the task to various roles, not users. Thus, "the
approver" might be multiple people. You can create a new
workflow, or edit the existing one, to assign to a specific user. I'd
expect that this assignment would be gone than.
However, once that one user is on vacation, all approvals would pile up.
