Hi Jan,
if you refer to the Docker environment parameters, the quotes are
likely escaping the shell's interpretation of the contained
& (and potentially other) characters. This way
you can copy/paste the lines right into your shell, otherwise you'd
have to escape the individual \&, which also
looks weird.
