I think you hit the nail on the head ... websites. What is Liferay now, is it Wix / Squarespace / Wordpress hybrid or is it Liferay? Semver would show that these changes are Liferay 8.

For websites ... yes. For intranets ... no. There is clearly a direction Liferay are moving and it could be leaving some important use cases behind. These changes should be configurable not forced, or allow a setup wizard that configures liferay for website vs portal vs social vs collaborative use cases. One size doesn't fit all.

The menu itself is totally defunct in terms of future growth, the max item limit of any drop down should be less than 10. Unless sub menus are offered which will make the menu even longer I can't see that menu growing with the product ... It's going to have unforseen issues (that for me are already seen).

The issue though, don't use color to denote icon meaning.

I agree.
We usually added our own icon/username to the top right and a logout button/dropdown and hide the whole productmenu for most users. I always found it strange that the user settings were coupled to the product menu. With this split, it is easier to

For example, here in the forum, when I authenticate, that large bar (65px if I recall correctly) is added to the top, stealing some screenheight, and there is a mostly useless menu on the right. I don't have any sites and no administrative roles. So, it would be far more convenient, if that whole thing would vanish.

But I am also not sure, if we will ever use the "standard" user dropdown. I will open a second thread for that.

99% of websites I've visited have the user avatar on the top right as a clickable icon, (I've honestly yet to find one where this isn't the case).

I'd argue the preferred strategy is to make the significant changes in the major update, and educate users before/when upgrading. Stabilization should occur in service packs.

There's a worse issue ... not many of or users would know they can click on it (even though they can in 7.0) and will come to us asking us why we removed their menu. Changes like this should be gradual. Can the menu be restored to the left (and thus the product menu put back for "registered users") until this change is stable and then ... make a change over after user eduction and comuncation about changes in service packs.
