It would great if Documents and Media made it possible to upload whole folders from local device to server.

fyi: There's a "multiple file upload" for each folder.
And, firewalls/configuration permitting, you can also mount a network drive through WebDAV ("Access from Desktop")

I know about "multiple file upload" function. While trying
to use this function to upload a folder tree I found Liferay was not
able to automatically create the sub-folder structure.
It would
be cool if I could select a local folder and upload all its contents
and let Liferay automatically create the matching sub-folder structure.

I don't think that HTTP upload has a concept of folders. That would be in the realm of WebDAV, if it's active&usable on your site. (but you can prove me wrong on that assumption)
On the other hand, an upload of a zip file that's extracted into its individual elements might be an option for a feature request, or a custom implementation.
Folder and sub-folders upload is directly available in Google Drive, MS OneDrive, etc. No app is needed for this, being a web browser the only requisite.
My proposal is Liferay makes available the same functionality.
